Red Lentil Bread

This red lentil loaf is a great source of plant-based protein and gut-friendly fiber. It's held together with olive oil, which provides heart-healthy omega-3s.

Ingredients

400g red lentils

 

2 tbsp baking powder

 

5g salt

 

60ml olive oil

Method

1. Soak the lentils overnight

 

2. Drain and rinse the lentils

 

3. Add to a food processor together with the rest of ingredients

 

4. Spread over a loaf tin lined with parchment paper

 

5. Bake for 60 min at 180C
