Potato Quiche

This potato quiche is the ultimate crowd-pleaser—quick to prepare, packed with wholesome ingredients, and perfectly sized to serve six!

Ingredients

5 potatoes

 

1 red pepper, chopped

 

Handful of mushrooms, sliced

 

Handful of cherry tomatoes, halved

 

3 eggs

 

120 milk of choice, I used soya

 

Handful of cheese

Method

1. Preheat oven to 200c

 

2. Boil your potatoes until soft

 

3. Prepare your 9 inch dish. Add potatoes to the dish and smash them and cover the dish

 

4. Drizzle some oil over the potatoes and season with salt and pepper

 

5. Add the pepper, mushrooms and tomatoes

 

6. Mix the eggs with the milk and pour the mixture over the vegetables.

 

7. Top with cheese and bake for 25-30 minutes
