Hidden Veggies Cottage Cheese Bread

This delicious, veggie-filled loaf is a perfect way to easily add extra plants to your diet! High in protein, fiber, and beneficial antioxidants, it's a must-try.

COOKING TIME: 60 MINUTES
DIFFICULTY: EASY

Ingredients

200g grated carrot

 

200g grated courgette (squeezed to take out liquids)

 

200g oats

 

300g cottage cheese

 

2 tbsp flaxseeds

 

70g mixed seeds

 

2 eggs

 

1/2 tbsp baking powder

 

1/2-1 tsp of salt (to taste)

Method

1. Preheat your oven at 180C

 

2. Mix all the ingredients in one bowl until well combined, use your hands if needed

 

3. Form the dough into an oval loaf shape with wet hands on some baking parchment, pressing it firmly together. keep the loaf the same height throughout and not too thick otherwise this will

affect cooking times.

 

4. Bake at 180°C for 60 minutes or more until cooked through.
