
Crumpet Bake
A simple bake that transforms crumpets into a more nutritious treat. Perfect for the whole family, and you can mix in any fruit you fancy.

Ingredients
2 crumpets
1 egg
Splash of milk
Cinnamon
Drizzle of maple syrup

1 Apple, diced
Frozen blueberries
Green yoghurt
Method
1. Preheat your oven or air fryer to 180C.
2. Add a little oil to a pan over medium heat. Fry the diced apple with a splash of maple syrup and sprinkle of cinnamon, until soft and caramelised.
3. Chop the crumpets into bite-sized pieces.
4. Mix together the egg, milk and cinnamon in a small bowl. Pour the egg
mixture over the crumpets. Mix, then allow to soak for a minute, until absorbed.
5. Top with the blueberries and apples.
6. Bake for 15-20 mins, then top with yoghurt and maple syrup
