Cottage Cheese Bowl

This nutrient-rich bowl is loaded with protein, plant goodness, and healthy fats to keep you feeling full and energized.

Ingredients

1/2 block of tofu

 

1/2 can of black beans, drained

 

1tsp of cumin

 

2 tsp smoked paprika

 

1/2 tbsp tomato paste

 

1/2 tbsp chipotle paste (optional)

 

1 avocado

 

1-2 sweet potatoes

 

150g of cottage cheese

Method

1. Grate tofu and fry with cumin, smoked paprika, tomato paste and chipotle paste, if using. Season with salt to taste. Fry until crispy.

 

2. Add black beans and continue to fry for a few more minutes. Cube the sweet potatoes and roast until cooked and crispy

 

3. Assemble the bowl including the cottage cheese and avocado.
