
Cookie Dough Dates
Cookie dough–stuffed dates are the ultimate easy, no-bake treat—an indulgent-tasting snack or a perfect sweet bite after dinner that’s surprisingly nourishing.

Ingredients
50g oat flour

35g pitted dates
​
1 ½ tbsp maple syrup
100g canned white beans (rinsed and drained)
1 heaped tbsp almond butter
Pinch of salt
35g chocolate chips
25 extra pitted dates (for filling)
Method
1. Place the oat flour, 35g dates, maple syrup, white beans, almond butter, and salt into a food processor. Blend until smooth and creamy.
2. Stir through the chocolate chips.
3. Slice the extra dates open and remove any stones if not already pitted.
4. Fill each date generously with the cookie dough mixture.
5. Store in the fridge until ready to enjoy.
