Chocolate Snack Bar

This indulgent snack bar is loaded with plant points and gut-loving fiber. Keep it in the fridge for the perfect mid-morning boost or a satisfying evening treat.

Ingredients

50g pumpkin seeds

 

50g shredded coconut

 

50g toasted flakes almonds

 

50g  flax linseeds

 

100g cashew butter

 

50g peanut butter

 

2 tbsp of maple syrup (optional)

 

250g pitted dates

 

120g 80% dark chocolate, melted

Method

1. Open the dates and press upside down over preachment paper creating a layer.

 

2. With another parchment paper on top, use a rolling pin to create a unified layer and as flat as you can

 

3. In a bowl mix the cashew butter and peanut butter (at this point add maple syrup if adding it)

 

4. Add the remaining ingredients until well combined

 

5. Layer this mix on top

 

6. Finish with melted dark chocolate and a pinch of salt

 

7. Refrigerate for at least 30 minutes

 

8. Cut into squares and enjoy!
