Chickpea Blondies

These delicious high-protein blondies are a game-changer for snack time or dessert. Made with plant-based protein from chickpeas and healthy fats from peanut butter, they perfectly satisfy your sweet tooth while keeping you feeling full and energized.

MAKES: 6 BLONDIES

Ingredients

1 tin of chickpeas, rinsed and drained

 

125g smooth peanut butter

 

80ml of maple syrup (or honey)

pinch of salt

 

2-3 TBSP milk

 

1 tsp baking powder

 

60g dark chocolate chips

 

Handful of raspberries

Method

1. Preheat the oven to 200c

 

2. Grease a small square baking dish.

 

3. Add all the ingredients except the chocolate chips and raspberries to a blender

 

4. Stir in the chocolate chips, spread in the baking dish and finish with some raspberries and extra chocolate chips

 

5. Bake for 15-18 minutes

 

6. Slice when cooled
