British Raspberry & Pistachio Oat Bars

Celebrate raspberry season with this summery, naturally sweet breakfast or snack! It's the perfect blend of seasonal freshness and nutrition, packed with fiber and healthy fats.

Ingredients

3 bananas

 

90g of oats

 

2 tbsp pistachio butter or cashew butter

 

150g of fresh British raspberries

 

180g Greek or coconut yoghurt

 

30g of chopped pistachios

 

Optional: 3 chopped dates

Method

1. Mash the bananas in a baking dish, add the raspberries, oats, nut butter, Greek yoghurt and chopped dates if using.

 

2. Mix until well combined and spread evenly to cover the full base of a baking dish. Top with the chopped pistachios.

 

3. Bake at 180C for 35-40 min until golden on the top.

 

4. Let the bars cool before chopping up into individual bars. Theser can be stored in the fridge for up to 5 days.
