British Blackberry Breakfast Meal Prep

Ingredients

Blackberry & Stewed Apple Overnight Oats

50g porridge oats

150ml unsweetened almond milk (or milk of choice)

​

1 small apple, chopped (leave the skin on for extra fibre)

​

1 tsp cinnamon

​

1 tsp chia seeds

​

1 tbsp almond butter

​

50g fresh British blackberries

​

1 tbsp toasted flaked almonds

Blackberry Kefir Pot

150g plain kefir

​

100g fresh British blackberries

​

1 small banana, sliced

​

15g toasted walnut halves, roughly chopped

​

10g pumpkin seeds

Blackberry Smoothie

100g fresh British blackberries

1 small banana

​

1 heaped teaspoon flaxseeds

​

150g full-fat Greek yogurt

​

50ml water (or unsweetened almond milk)

​

1–2 ice cubes

​

Handful of fresh spinach

​

Pinch of cinnamon

Method

British Blackberry & Stewed Apple Overnight Oats

1. In a small saucepan, add the chopped apple, cinnamon, and 2–3 tbsp water.

​

2. Cook over medium heat for 5–7 minutes until soft and lightly caramelised. Let it cool slightly.

​

3. In a jar or bowl, combine the porridge oats, chia seeds, and almond milk. Stir well.

​

4. Add a layer of stewed apple on top of the oats. Top with fresh British blackberries and a spoonful of almond butter.

​

5. Sprinkle toasted flaked almonds over the top.

​

6. Cover and refrigerate overnight (or at least 4 hours) so the oats and chia seeds absorb the flavours.

British Blackberry Kefir Pot

1. Stew the blackberries: In a small pan, gently heat blackberries over low-medium heat for 3–5 minutes until they start to break down and release their juices. Let cool slightly.

2. Prepare the marble effect: Pour half of the kefir into a clear glass or jar. Spoon in the stewed blackberries on one side. Use a spoon or skewer to gently swirl, creating a marble effect.

​

3. Add banana slices on top, then spoon in the remaining kefir. Top with a few fresh blackberries for visual appeal.

​

4. Sprinkle toasted walnuts and pumpkin seeds on top. This adds crunch, fibre, and plant-based protein.

​

5. Sprinkle toasted flaked almonds over the top.

​

6. Enjoy immediately, or cover and store in the fridge for up to 24 hours

Seasonal British Blackberry Smoothie

1. Add the blackberries, banana, Greek yogurt, flaxseeds, water (or almond milk), spinach, and cinnamon to a blender.

2. Blend until smooth, adding the ice cubes to chill and slightly thicken the smoothie.

​

3. Taste and adjust consistency with a splash more water or almond milk if needed.

​

4. Pour into a glass and enjoy immediately.​
