Blueberry and Chia Pancakes

Fluffy blueberry and chia seed pancakes, packed with protein, rich in antioxidants, and a great source of gut-friendly fibre.

Ingredients

2  eggs

 

3 tbsp greek yoghurt

 

1 tbsp honey

 

150ml  milk of choice

 

2 tbsp chia seeds

 

200g wholemeal flour

 

Tsp baking powder

 

Pinch of salt

Method

1. Combine wet ingredients. Add dry ingredients and combine.

 

2. Preheat large pan over medium low to medium heat. 

 

3. Melt 1 tablespoon butter onto pan or spray pan with cooking spray.

Add even scoops of pancake batter to the pan.

 

4. Once cooked on both sides, transfer to a plate.

 

5. While your pancakes cook, mix together all of the topping ingredients besides the blueberries. 

 

6. Once all the pancakes are cooked, stack and top with the yoghurt. Sprinkle blueberries and serve.

Topping:

 

Zest and juice of 1 lemon

 

2 tbsp kefir yoghurt
